    After I saw a few videos about these Igayaki donabes, I already bought the 3 gou rice cooker, and the Mushinabe steamer, I am slowly becoming obsessed with these equipments, they are really not hard to use, after use just clean it with hot water, or soak it for 20 minutes, and dry upside down, just put a cutting board under half of it so the air can circulate, and you can use it the next time you cook. I also bought Naokos cook book for the traditional recipes. The clay cookware really adds an element to your dishes that elevates them to another level.

    Wonderful idea, use a bottom vented smoky joe and have all the hot embers fall through and melt a hole in your hose, then give burning rubber flavor to your meats.. Try it on a barrel smoker with a side vented or door vented fire box. I'm betting it'd actually work without issues. I do have problems with Pitmaster IQ 120. It isn't waterproof and rain destroyed mine. Replaced it and other problems happened with the electronics constantly causing me probe errors. replaced the probes with their brand probes and kept having the problems. I even resoldered the connections where the probes connected to the pc board and it still flashed the errors and ruined my bbq. I bought a $35 controller that works better and has battery power. I modified one of those solar powered battery packs to charge laptoips to work with the controller. It actually allows a/c charging and operate at the same time so I could smoke meats for much longer than normal. If I regulate the pit, and load it properly, I could smolder wood and slowly burn charcoal, getting through without burning up the fuels for 14 to 16 hours straight, all depending on the charcoal used. Kingsford Competition Briquettes work and taste best. I will buy other brands, and thank you Alton Brown for the fine lesson on how to burn up my air hose!

    0:08 I've learned to make my own bottarga here in Florida. Mullet roe season is from late November till end of January. I pay 10 dollars a lb. for fresh roe, then I salt it for about 3 hours to dehydrate it then rinse the salt and dry it , the into the dehydrator and in about 6-8 hours I have delicious Bottarga at a fraction of the cost of buying it on Amazon or elsewhere.

    The wrongest way to eat Bottarga! Typicly American! You have to Enjoy this on a thin piece of toasted bread with a good unfiltered olive oil and dont bite it like a Snickers! Thats discusting!     Lol this is the completely a wrong way to use Ibushi Gin. First of all you don't soak the chips. And you don't put the lid on and seal it with water until you can actually see smoke come up. And after about 15 min of heat-on cooking, you turn the heat off and leave the lid on for another 30-40 minutes, then serve.

    Fella needs more practice with that mattarello. Rolling the dough onto the mattarello without downward and forward pressure is pointless. Seems like he is imitating something he has seen done without really understanding why and how it is done.

    I'm sorry but your explanation of the pot makes no sense. For one it can't mimic a pressure cooker in any way, as it does not pressurize at any stage. Second, clay is bad a conductor heat, which means that once it's hot it takes a long time for it to release it again. The pot is great, I'm sure, but your explanation is just nonsense

      Clay is not a good conductor of heat but holds heat very well. This is why you turn the heat off once it starts steaming. The residual heat softly cooks the rice to completion. I figured this out cooking rice in my normal pan years ago. It comes out perfect every time and doesn't stick to the pan.

      @@johnvrabec9747 You just repeated what I said. I was just pointing out that his explanation of the physics of the pot are completely wrong. The pot produces no pressure whatsoever (so it doesn't mimic a pressure cooker) and clay is not a good conductor of heat, but a bad one, which is why it holds heat well.
